Craft Brewery Taproom
Open a brewery and taproom in a county seat of 25,000: build a mug club, get your tap handles into the bars, and draw the beer tourists, against domestic lager on every tap and the sports bar that has the town on Fridays.
You have a ten-barrel brewhouse, six fermenters and a taproom in an old feed store a block off the square. Twenty-five thousand people live in town and sixty thousand in the county; most of them drink light lager, some of them are curious, and the state's beer trail brings visitors every weekend. The decisions are a small brewery's: what a pint costs in the taproom and a keg at wholesale, how many bartenders and brewers to carry through a slow January, whether to self-distribute to bars across the county or keep the beer in your own taproom where the margin is, and how much to spend on events, food trucks and a mug club. It teaches the economics of making and selling your own product: taproom margin against wholesale volume, building regulars, and a brand that has to be earned locally.
